RASPBERRY CHAI SEED JAM SQUARES

I came up with this recipe for a tasty and sugar free afternoon snack after my discovery of the wonder that is Chai Seed Jam! Chai seeds are among the most nutritious foods on the planet – loaded with fiber, proteins and omega-3 fatty acids (which help protect against heart attacks and stroke) So this jam is not only delicious it is actually NUTRITIOUS (and lets face it you never thought I would be saying that about jam!)

300g raspberries (frozen or fresh)
3 tablespoons honey
2 tablespoons chai seeds
1 teaspoon vanilla essence
Method:

All you need to do is mix all of the above ingredients in a pan, brining to the boil and then simmer down for 10 minutes until the mixture thickens and then leave to cool.

And there you have it… your healthy jam containing only naturally sugars!! Store this in a jar in the fridge to use for porridge, on toast, stir into yoghurt or of course see below for how to make them into my raspberry jam oat squares…

1 tablespoon chai seeds
4 tablespoons water
50ml liquid coconut oil
50g unrefined sugar
1 tablespoon cinnamon
1 teaspoon vanilla essence
160g oats
60g ground almonds
1/2 teaspoon bicarbonate of soda
Method:

  1. Preheat oven to 180°/gas mark 5 and line a 8-inch by 8-inch baking tray with baking parchment.
  2. Combine the chai seeds with the water and stir together. Then leave this to thicken for 10 minutes to form a thick gloopy consistancy.
  3. Comine oil, sugar, cinnamon, vanilla and the chai mixture from step 2.
    Add the oats, ground almonds and bicarb to this mixture and stir together until combined.
  4. Press 3/4’s of oaty mixture into the base of the tray which is lined with parchment.
  5. Add a the full quantity of jam (from the recipe above) and spread over this layer and then sprinkle the last 1/4 of the oats on top of this mixture covering the whole surface.
  6. Bake in the oven for 30 minutes until the top becomes golden brown.
  7. Leave to cool and then cut into small squares and store in a tin to eat as a healthy snack throughout the week.
